Although Molise is a small region, it has an incredible variety of typical products and traditional dishes. There are 159 traditional agricultural food products recognized by the Ministry of Agricultural, Food and Forestry Policies: black and white truffles, extra virgin olive oil, mushrooms, bread, a surprising variety of fresh and cured meats, fresh and aged cheeses, fresh pastas, baked goods and Tintilia DOC, a robust and full-bodied wine obtained from the homonymous autochthonous vine of Molise.
The cuisine is simple and authentic, based on the genuine products, expression of the history and traditions of the area. Flavors and knowledge that are handed down from generation to generation through skilled hands who are dedicated to the preparation of dishes with an almost religious devotion, perpetuating their cyclic rituals.
A gastronomic memory jealously guarded and preserved that starts from the ‘poor’, popular cuisine, but which is open to modern interpretations and experiments with surprisingly refined results.
