Molise has many typical Easter dishes, traditional recipes that can vary depending on villages, families or revisitations, but there is a dish that really never fails during the Easter period (and never gets tired): casciatelli (or even fiadoni).
What are casciatelli? A rustic combination of eggs and cheese enveloped in a very firm dough in the shape of half-moon. Few and genuine ingredients in a combination that generates an unforgettable taste. The casciatelli are filled with eggs and cheese (usually a mix of pecorino, rigatino and parmesan) and then baked.
It’s a real pleasure for the palate. Enjoy them at the beginning, during or at the end of a meal. If you start it’s really hard to stop!
