Who doesn’t know waffles and gaufres? In Italy there are very similar sweets, which are even better. In Molise they are called ‘ferratelle’ or ‘cancelle’, precisely because of their typical gate design. The shape is usually rectangular or rhomboid.
It is a typical dessert from Molise, included in the list of traditional Molise food products, but it is also prepared in Abruzzo and in some countries of Lazio.
Ferratelle are really a delicious dessert. They are also simple to prepare but a special tool is needed that is easy to find: a mold, consisting of a double plate, which gives the dough its unmistakable shape.
The traditional iron mold is placed directly on the stove, but today it is also possible to find electric molds.
In the past, the mold was placed directly on the embers of the fire.
There is not a single recipe, but there are different variations according to the areas, according to the tastes and consistency you want: there are in fact those who prefer them softer and leavened and those who prefer them thinner and crisper; those who love them flavored with anise and others with lemon.
Here is the recipe (35-40 ferratelle):
– 500 g of flour
– 4 egges
– 200 g of sugar
– 1 glass of white vermouth bianco (or other liqueur) or 1 glass of milk
– 1 glass of seed oil
– lemon zest (or aniseed flavoring)
In a large bowl, mix the eggs with the sugar and the grated lemon zest with the electric whisk. Add the oil and finally the flour. Heat the plate and grease it with seed oil or butter.
Add a spoonful of dough to the center of the plate, close it and keep it closed for about a minute and then turn the mold over to cook the other side, always for about a minute.
They are excellent natural but also accompanied by creams and jams.
