‘Pampanella’ is a pork-based dish, flavored with very generous doses of spicy and sweet chilli. The meat, with an intense red color, is soft and juicy and has an exquisite flavor.
Excellent hot but also cold, ‘pampanella’ can be eaten between two generous slices of Molise bread but also alone. It is perfect as street food.
It is a dish with ancient origins, typical of San Martino in Pensilis, a small town in the lower Molise; over time it has spread throughout the region and is currently one of the traditional Molise food products.
How do you prepare it?
The preparation is not difficult, but requires time and quality of the raw material.
First you need the pork tenderloin, complete with ribs. Cut it, without affecting the bones, and cover with a mixture of chopped red pepper (sweet and spicy), garlic and salt. Cooke in the oven at 180 ° for about two hours.
