In spring, few ingredients are enough to obtain a tasty dish: broad beans, artichokes, pecorino, stale bread and eggs. Let yourself be amazed by the simple flavors of this typical Molise recipe and try to bring it on the table too!
All the ancient Molise recipes are based on the seasonality of the products that can be easily grown and found in our territory. In spring, especially in May, the two main ingredients on the table are artichoke and broad beans: the first with a sweeter flavor and the second with a slightly bitter aftertaste, which combined guarantee the success of each dish.

Ingredients
- 4 artichokes
- 500 kg of fresh broad beans
- 2 eggs
- 200 gr of pecorino
- 200 gr of crumbled stale bread
- Garlic
- Oil
- Salt
Procedure
Clean and wash the beans and artichokes with running water. Create a dough with pecorino, eggs and crumbled stale bread with which to subsequently fill the artichokes with the help of a spoon. Place the stuffed artichokes in plenty of boiling water, with the addition of broad beans, a couple of cloves of garlic, a drizzle of oil and dirty. Leave to boil over low heat for 30/40 minutes and serve it.
