The ‘alici bojanesi’ is a characteristic recipe of Bojano, a village in the province of Campobasso, in Molise, typical of the Christmas period. The real protagonists of this dish are obviously the anchovies, the blue fish par excellence of the Mediterranean area.
Here the recipe of Mrs. Patrizia Giovanna Barile, who prepares them on Christmas Eve.
The ingredients are:
- Anchovy fillets;
- 1kg flour;
- 250gr mother yeast;
- 20gr olive oil;
- Salt
Procedure
Prepare the batter by combining the flour, the olive oil, the salt, the water, the mother yeast and the anchovies. Remember that the dough have to be softer than that of pizza. Then, let rise it for 3 hours.
When the leavening is finishes, create a kind of balls and fry them in the boiling oil with the help of a teaspoon. You can take out them only when they are completely browned. And when the game is done… Enjoy your meal!
